This is so refreshing, and delicious. I was so surprised at how good it tasted the first time I made this. It is perfect for hot summer weather.
Ingredients: 1. cubed seedless watermelon about 3 cups. 2. English cucumber seeded and diced about 1/2. 3. Green onion 1 or 2 sliced. 4. Crumbled Feta cheese about 1/2 cup. Mix all ingredients in a glass bowl except the feta cheese. Make the dressing in a separate bowl or jar: 1. Clove minced garlic, 1 clove. 2. small seeded and minced serrano or jalapeno pepper, 1. 3. Extra virgin olive oil about 1/2 cup. 4. Red wine vinegar, 3 Tbsp. 5. Black pepper, and Kosher salt to taste. 6. Handful of chopped fresh mint. When ready to serve, mix dressing into salad. Sprinkle the feta over the top.
